Being a runner, banana (yalakki ) is my go to option just before I head out for my morning run. Buying a dozen also means that I am left with over ripped ones at the end of the week. Many make it to my smoothie bowl but a lot more to my bread pan for warm banana bread.
Dee's Banana Bread
made with ripe bananas. Healthy, quick and delicious.

INGREDIENTS
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup jaggery
1/2 cup butter
2 eggs
2 1/2 cups mashed overripe bananas
INSTRUCTIONS
Pre-heat the oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan or line a pan with baking paper.
Combine flour, baking soda and salt in a large bowl. Beat jaggery and butter with a electric blender or a fork in a bowl till smooth. Stir in beaten eggs and mashed bananas until well blended. Stir banana mixture into the flour mixture until just combined. Pour batter into the prepared loaf pan.
Bake in the pre-heated oven for about 60 min. Check if baked with a tooth pick. If inserted into the center comes out clean, them its done. Let the bread cool for 10 min then turn out onto a wire rack to cool completely before you slice it.
