About the Recipe

The Lemon Coriander Clear Soup recipe is a scrumptious and healthy soup made with a refreshing combination of lemon juice, fresh coriander leaves, and a few vegetables. It is rich in vitamin C and low in calories. A total comfort food on a rainy day, winter evenings or when you are unwell.

Ingredients

  • Seasonal Vegetables: Use seasonal veggies or your favourites like broccoli, carrots, cabbage, sweet corn, bell pepper and peas. (One bowl)

  • Vegetables:  Onion, ginger and garlic.

  • Butter: 1 tablespoon.

  • Herbs: 1 small bunch of fresh coriander leaves. 

  • Seasonings: salt and pepper.

  • Lemon Juice: 1 freshly squeezed lemon

  • Corn flour: Optional

Preparation

  • Heat butter in a saucepan over medium-high heat. Add sliced onion, finely chopped ginger, garlic and saute for 30 secs until they turn translucent.

  • Add the chopped vegetables, saute for 2 minutes and then add 500 ml of water, salt, and black pepper and bring it to boil. Don't over cook the vegetables, let the colour retain.

  • Switch off the flame and add the lime juice and coriander leaves and mix well.

  • Serve hot with a slice of garlic bread.


    Adding corn flour is optional if you like your soup thick. In a small mixing bowl, combine one tablespoon of cornflour and ¼ cup of water. Mix until there are no lumps.

    Add the cornflour slurry and bring the soup to a boil. The soup would thicken a bit. At this stage, turn off the gas flame.
